Canadian Organic Sweet Corn!!

Our Sweet Corn will soon be appearing in your baskets! Enjoy!! Weather permitting, it could last well through September and the sweetest varieties mature later in the season. And it is Canadian Organic unlike the chemical-laden sweet corn which plagues roadside stands and markets these days! Yikes – unless it is certified organic, it is literally full of chemicals from seed to harvest!

Our sweet corn is very expensive to grow, but we should have large quantities in the weeks to come!! And it will soon be available as an Add-On as well.

The down-side of certified organic corn, is that sometimes little critters (they have loved the hot, dry conditions this summer) can find their way into a cob. If this happens, just cut out the small portion which the critter has invaded and use the rest. This is just a fact of life in growing corn which has not been soaked in chemical pesticides. We often think that if consumers truly realized the huge amount of chemicals used in conventional corn production – even LOCAL conventional sweet corn – that they would never serve it to their children!

    I have never tasted better corn. Has anyone ever frozen corn successfully? I would love to order extra if I knew that I could keep it for the middle of winter… Would you just cut it off the cobs (raw) and then freeze it? Suggestions?

    Our best kept secret is that we are in the process of freezing tons of our fresh sweet corn for our winter home delivery baskets! Essentially, the corn is blanched, cut from the cob, bagged, and flash frozen (frozen very quickly). Our preliminary testing shows that the product is outstanding – as delicious and sweet as fresh!! Definitely something to look forward to!

    Your mention of “little critters” made me smile. This week, I found a “little critter” in my beautiful Nappa cabbage. And it litterally made me smile because for me, it was a good sign…a “no pesticide” sign. A good wash, and…the cabbage was simply delicious in a cabbage rolls casserole.

    I have never tried your sweet corn but needless to say, I am much looking forward to my basket tomorrow morning!
