White bean, kale and sausage soup

Warm yourself up with deliciousness. This soup is as hearty as it is easy. The magic is lots of olive oil and garlic.

Ingredients

  • 1/4 cup olive oil
  • 1 large onion roughly chopped
  • 3 mild Italian sausages
  • 1/2 head of garlic roughly chopped
  • 1/2 tsp. red pepper flakes
  • 1 head of kale, sliced into ribbons
  • 1 c. dried white beans (or one can drained)
  • 2 c. turkey or chicken broth
  • Sea salt

Guidelines

  • Cook the white beans (20 minutes in an Instapot)
  • While the beans are cooking heat olive oil in a large pot
  • Add the garlic and lower the heat so that the garlic gets golden, but not brown
  • Add onion and stir
  • With kitchen scissors, cut the sausages in large chunks and add to the garlic and onion
  • Rinse the kale and shave it away from the stalks, slice the kale and add to the mix
  • When the kale is coated in oil add the sea salt and hot peppers flakes
  • When the kale starts to wilt add the broth. Bring to a boil and let simmer.
  • Add the beans when done
  • Season to taste and serve with some good bread
