These are salads that you can take to work on Monday and will stay delicious all week. They include protein so they provide an all-in-one bowl of yumminess.

Bean Salad

Delicious, versatile, and healthy bean salad

This salad can evolve as your week evolves. Bring some leftover rice to work and and mix it in with your bean salad, add some feta cheese or hard boil an egg to top it off for extra protein.

Ingredients:

  • Can of mixed beans (or any kind you like)
  • 1 large tomato or a handful of cherry tomatoes
  • 1/2 cucumber
  • 1/2 red onion
  • 1 sweet pepper
  • 1 cup of mixed herbs (parsley, cilantro, mint, chives)
  • 1 chopped garlic clove

Vinaigrette:

  • 1 tsp. Montreal steak spice (or salt and pepper)
  • 1/4 c. balsamic or red wine vinegar
  • 1/2 c. olive oil

Guidelines

  • Rinse the beans
  • Chop the veggies and mix everything together in a bowl
  • Pour vinaigrette over and adjust seasoning (you may not need all of the vinaigrette)
  • Let the flavours blend for at least 30 minutes before eating

Waldorf(ish) salad

Celery, apple and pecans are a perfect combo

Crunchy, sweet and flavourful: your workmates will be jealous.

Ingredients:

  • 4-5 celery stalks
  • 1 crispy apple (I like Galas)
  • 1 c. pecans
  • 1.4 c. crumbled blue cheese
  • 1/2 red onion
  • Sea salt
  • Cayenne

Vinaigrette:

  • 1 tsp. celery salt (or salt and pepper)
  • 1/4 c. white wine or apple cider vinegar
  • 1/2 c. olive oil

Guidelines

  • Heat up a small frying pan—no oil—and put the pecans in the pan with a little sea salt and a dash of cayenne—toast until fragrant and remove from heat. Nuts know when you’re not paying attention so do not get distracted or they will burn!
  • Chop the celery, apply and onion and combine in a bowl
  • Add the blue cheese, nuts and vinaigrette (you may not need all of the vinaigrette) and mix everything together
