Tomato, goat cheese, and basil on salted sourdough focaccia

Summertime is all about tomatoes. This is quite possibly the most delicious thing to eat for breakfast, lunch, and dinner.

Ingredients:

  • A ripe (but firm) tomato
  • Olive oil
  • Sourdough or other good bread (I used sourdough focaccia from Bread and Roses Bakery)
  • Salt and pepper
  • Fresh basil
  • Goal cheese

Guidelines:

  • Heat olive oil in a skillet
  • Cut the bread in half and when the oil is hot put it face down in the skillet
  • Cut the tomatoes into thick slices and place next to the bread in the hot skillet
  • Top the tomato slices with crumbled goat cheese
  • When the bread is golden (1-2 minutes) remove to a plate and top with the tomato and goat cheese which should be warmed, but not cooked
  • Season with salt and pepper
  • Garnish with shreds of fresh basil
